Calabaza sauce is a savory fusion of roasted calabaza squash, garlic, onions, and spices, resulting in a velvety, subtly sweet accompaniment to enhance pasta, grilled meats, or as a dipping sauce for crusty bread.

INGREDIENTS: Water, pumpkin, onion, salsa macha (olive oil, dried chiles, peanuts, cocoa nibs, garlic, apple cider vinegar, sesame seeds, salt, Mexican oregano), cashews, apple, olive oil, apple cider vinegar, tomato paste, garlic, nutritional yeast, salt, cinnamon

FOR SERVING: Use one pound protein – we recommend chicken, fish, beans or tofu. Brown until not-quite cooked through; remove meat from pan (leave beans or tofu). Add sauce and about three cups of vegetables to pan, stirring until done. Add protein back to pan and cook thoroughly. Serve hot over rice.
