Thai Green Curry with Sweet Potato and Kale
Ingredients:
14 oz tofu, drained, pressed, and diced
2 tbsp coconut oil, divided
1 medium sweet potato, diced
1/2 red onion, sliced
1 jar Clean Plate Pantry Thai Green Curry sauce
1 cup snow peas
4 cups kale
Steamed rice for serving
Directions:
In a large skillet, heat 1 tbsp oil until it shimmer. Add tofu and brown, stirring often, for 10 mins. Remove tofu from pan and set aside.
Heat remaining oil in the pan and add sweet potato and onion, cook, stirring frequently, for 3-4 mins.
Add 1 jar Clean Plate Pantry Thai Green Curry sauce to the pan, cover and simmer for 10 mins or until vegetables are tender.
Add snow peas, kale, and tofu and simmer until kale is wilted and snow peas are just tender.
Serve with steamed rice.
